If you've caught a nice Red Emperor you don't want to waste anything! In this tutorial we show you how to fillet a Red Emperor using a wing-on technique for maximum recovery.
To fillet wing-on you basically start as though you were going to gill and gut the fish (i.e. by cutting around the gills and cutting from the anus up to the head). You then fillet the fish rib-in; skipping the step that normally cuts around the wings.
