How to Fillet a Red Emperor (rib-in)

Red Emperor are an excellent eating fish, in this tutorial Konway demonstrates how to fillet a Red Emperor with a rib-in filleting style.

The filleting technique shown in this video is one of the easier styles we demonstrate so if you have never filleted a Red Emperor before this is a good place to start.

Make sure you cut well into the head on a Red Emperor as they have quite a lot of meat there that you can leave on your fillets as Konway demonstrates in this tutorial.
