Filleting Red Emperor (over-the-ribs)

In this demo video Konway fillets a nice Red Emperor using an over-the-ribs filleting style.

Notice the prominent raised bump on the ribcage which is typical of red emperor. It takes a bit of practice to cut over the ribs expertly on red emperor, as you have to cut over that bump without losing too much meat.
