In this video Konway demonstrates one technique for filleting over-the-ribs. Filleting over the ribs is faster than the rib-in style we show in other videos but most people find it a bit harder to learn.
Learning the technique shown in this video should be quite a natural progression if you have already learned the rib-in filleting style we teach. This technique is quite similar and really just involves making some extra cuts to ensure the ribs are left on the frame of the fish.
